Easy Choc Peppermint Mousse Jars ๐ŸŽ„

Thereโ€™s nothing worse than racing around the supermarket like a headless chicken on Christmas Eve with every else. This year I did my Countdown shop ahead of time, purchasing as many non perishables as possible. I also wanted to whip a couple of recipes that could be frozen and put together quickly on Christmas Day.

Here is a decadent yet simple recipe for a Christmas (or any other occasion) dessert thatโ€™s sure to be a hit!

Choc Peppermint Mousse Jars


  • 500ml Fresh Cream
  • 250g Chocolate (I used 62% Whittakers)
  • 1 teaspoon Vanilla Essence
  • 1 teaspoon Peppermint Essence
  • 2 tablespoon Icing Sugar (more or less to taste)
  • 350g tin of Corinthians Chocolate Mint Wafers
  • Vanilla Ice Cream
  • Jars of your choice for freezing and serving. (Mine were purchased from Countdown)


Heat your cream in a pot on medium to high heat until bubbles appear around the edges.

Using a metal whisk, stir in Chocolate until completely dissolved and smooth.

Add vanilla and peppermint essence and stir.

Taste it (of course ๐Ÿ™ˆ) and stir in icing sugar to reach your desired sweetness – you may need more if youโ€™ve used a darker chocolate to counteract the bitterness.

Remove from heat and allow to cool at room temperature.

Refrigerate until very cool, ideally overnight.

The next day:

Remove from the fridge. Your Mousse mixture will probably have quite a firm feel already which is great! Using an electric beater, thermomix with the butterfly whisk or cake mixer with the whisk attachment, whip your chocolate cream mixture to get some air through it until it forms an irresistible Mousse texture – it wonโ€™t take long donโ€™t worry ๐Ÿ‘๐Ÿป

your jars will Mousse like so.. doesnโ€™t have to be pretty people! I promise the taste is the star of this show.

Add a couple of crushed Corinthians Wafers..

Now for a generous (duh) scoop of icecream… I used Vanilla ๐Ÿฆ

Topped with a couple of whole Corinthians Wafers.

Now youโ€™re ready to spoil your tastebuds with a delicious dessert. What are you waiting for?

You can assemble and serve your jars immediately OR spoon (or pipe) your Mousse into jars and freeze it to them be assembled on Christmas Day – thatโ€™s what Iโ€™ll be doing!
